Ingredients :
225 g Self raising flour
175g butter, Softened, not melted
30ml lemon juice
2 tablespoon lemon zest
3 eggs
2 tablespoon poppy seeds
175ml milk
1 tablespoon vanilla essense
155g sugar
Glaze
1 cup icing sugar
15ml tablespoon lemon juice
Method :
Preheat the oven to 180 °C.
In the bowl cream butter and sugar until pale and fluffy.
Add eggs and beat until smooth.
Add the lemon juice, zest and poppy seeds.
pour in the milk, Vanilla essense and flour . Beat until all ingredients are combined.
Transfer the batter to the prepared loaf pan and bake for 55 minutes or until a toothpick inserted into the centre of the cake comes out clean. Let cool completely on a rack.
GLAZE
In a bowl, whisk together the icing sugar and lemon juice until smooth.
Place the lemon poppy seed loaf on a serving platter and drizzle with the glaze.
